Cake ingredients
200g butter
200g brown sugar
3 eggs
50g chestnut flour
50g almond meal
100g self raising flour
1tsp baking powder
1tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger
2 large apples
1tbs butter
2tbs brown sugar
Crumble topping ingredients
50g flour
30g butter
20g brown sugar
30g walnuts, chopped
Method
1. Peel, core and dice apples in 1cm pieces. Melt butter in a pot and add apples and brown sugar. Cook until apples are softened. Set aside.
2. Cream butter and sugar in a mixer until fluffy and pale. Add eggs gradually mixing in between. Scrape down the sides of the bowl with a spatula. Stir in flours and spices until just combined.
3. Line a 20cm round cake tin with baking paper and spread half of the cake batter on the bottom. Spread over cooked apples and finally the last half of the cake batter.
4. Combine flour and sugar. Rub butter into flour mixture. Add walnuts.
5. Top cake with crumble and bake at 160C for approxamatly 30min
